In 2012 we were captivated by the story of master sushi chef Jiro Ono, whose unbreakable work ethic brought him national fame—not to mention three Michelin stars for Sukiyabashi Jiro, his 10-seat restaurant in the basement of an office building off a Tokyo subway station.

Now, Jiro Dreams of Sushi director David Gelb returns with Chef’s Table, a new Netflix-exclusive documentary series on six of the world’s most awe-inspiring chefs that premiers April 26. Each of the six hour-long episodes profiles a different chef: Dan Barber (Blue Hill, NYC); Niki Nakayama (N/Naka, Los Angeles); Massimo Bottura (Osteria Francescana, Italy); Magnus Nilsson (Fäviken, Sweden); Ben Shewry(Attica, Australia); and Francis Mallmann (Restaurante Patagonia Sur, Argentina). We chatted with Gelb about the new series and life after Jiro.

Seafood from Slaves

MEN FORCED TO WORK AS SLAVES TO CATCH SEAFOOD FOR GLOBAL SUPPLY

In the Indonesian island village of Benjina, hundreds of trapped men work night and day to net squid, shrimp, snapper and other fish. Many are from Burma – – one of the world’s poorest nations — and have been kidnapped or tricked into fishing. Their living conditions are poor, and many haven’t seen families for so long, they’re considered dead. Their stories expose a dark truth in food industry — our seafood may come from slaves.

 

“If Americans and Europeans are eating this fish, they should remember us. There must be a mountain of bones under the sea,” Hlaing Min, a runaway slave says. “The bones of the people could be an island, it’s that many.”

Attention Health Conscience Consumers: High Fructose corn syrup re branding to ‘Fructose’ or corn sugar

As consumers become more health conscious, companies that manufacture junk food are being forced to get creative with how they sell their products. Even unpopular ingredients like high fructose corn syrup are now being forced to rebrand, because people are learning more and more about how damaging it is.

It was announced recently by The Corn Refiners Association, that they will now be labeling high fructose corn syrup as simply “fructose.” The Corn Refiners Association is the lobbying group that pushes for government protections of entrenched businesses in the agriculture industry. They are based in Washington DC and are a very strong controlling force in the food industry.

“Fructose”

The Corn Refiners Association said in a statement that, “HFCS-90 is sometimes used in natural and ‘light’ foods, where very little is needed to provide sweetness. Syrups with 90% fructose will not state high fructose corn syrup on the label [anymore], they will state ‘fructose’ or ‘fructose syrup.”

The only difference between this new substance and the original high fructose corn syrup is that the new “fructose” actually contains a higher percentage actual fructose, which is incredibly ironic considering the name change.

This is also the second time that high fructose corn syrup had to change its name. Just two years ago high fructose corn syrup was labeled as “corn sugar” on many products.
